Peanut butter Chicken & Pasta

Makes 4 servings

Ingredients

  • 1 tablespoon of oil to fry
  • 1 chicken breast
  • 1 carrot
  • 1 red bell pepper
  • 1/2 red onion
  • 280 grams pasta (spaghetti)

For the sauce

  • 2 tablespoons light brown sugar
  • 1 tablespoon grated fresh ginger
  • 3 tablespoons sesame oil
  • 3 tablespoons peanut butter
  • ¼ cup soy sauce
  • ¼ cup vinegar
  • 2 crushed garlic cloves
  • 2 teaspoons Sriracha sauce (to taste)

Method

  1. Slice all vegetables and dice the chicken into small chunks
  2. Add 1 tablespoon of oil to a pot and begin frying the chicken and then the vegetables.
  3. Blend the light brown sugar, fresh ginger, sesame oil, peanut butter, soy sauce, vinegar, crushed garlic and Sriracha sauce together using a stick blender. Adjust amount of Sriracha sauce to taste.
  4. Add the blended sauce to the pot, mix well and heat through then turn down the hob to a low heat.
  5. Prepare your pasta as directed on the packet.
  6. Once the pasta is ready drain it and add to the pot, mixing well with the sauce, chicken and vegetables.
  7. Plate as 4 portions and top with peanuts or cashew nuts if desired.
