Peanut butter Chicken & Pasta

Makes 4 servings
Ingredients
- 1 tablespoon of oil to fry
- 1 chicken breast
- 1 carrot
- 1 red bell pepper
- 1/2 red onion
- 280 grams pasta (spaghetti)
For the sauce
- 2 tablespoons light brown sugar
- 1 tablespoon grated fresh ginger
- 3 tablespoons sesame oil
- 3 tablespoons peanut butter
- ¼ cup soy sauce
- ¼ cup vinegar
- 2 crushed garlic cloves
- 2 teaspoons Sriracha sauce (to taste)
Method
- Slice all vegetables and dice the chicken into small chunks
- Add 1 tablespoon of oil to a pot and begin frying the chicken and then the vegetables.
- Blend the light brown sugar, fresh ginger, sesame oil, peanut butter, soy sauce, vinegar, crushed garlic and Sriracha sauce together using a stick blender. Adjust amount of Sriracha sauce to taste.
- Add the blended sauce to the pot, mix well and heat through then turn down the hob to a low heat.
- Prepare your pasta as directed on the packet.
- Once the pasta is ready drain it and add to the pot, mixing well with the sauce, chicken and vegetables.
- Plate as 4 portions and top with peanuts or cashew nuts if desired.
