Garlic Shrimp in Tomato Sauce

A light dinner meal

Serves about 4

Ingredients

  • 4 servings of shrimp, cleaned
  • 5 tablespoons Olive oil
  • 3 garlic cloves crushed
  • freshly ground salt and pepper
  • 25o mL tomato sauce
  • juice of 1/2 a lemon
  • 1 teaspoon sugar
  • 100 grams long-grain rice or couscous, cooked to serve
  • 3 tablespoons coarsely chopped fresh parsley, for garnish
  • coarsely grated zest of 1 lemon, for garnish

Method

  1. Put shrimp in a mixing bowl with oil, garlic, salt, and pepper. Toss to mix well.
  2. Put large non-stick sauté pan over high heat, for about 2 minutes. Put the shrimp mixture in the pan and stir for about 2 minutes, until pink.
  3. Reduce the heat to medium and add the tomato sauce, lemon juice, and sugar.
  4. Cook, stirring, for about 3-4 minutes. Check the seasoning.
  5. Serve the shrimp over the long-grain rice or couscous. Garnish with lemon zest and fresh parsley or other fresh herbs.
