Garlic Shrimp in Tomato Sauce
A light dinner meal
Serves about 4
Ingredients
- 4 servings of shrimp, cleaned
- 5 tablespoons Olive oil
- 3 garlic cloves crushed
- freshly ground salt and pepper
- 25o mL tomato sauce
- juice of 1/2 a lemon
- 1 teaspoon sugar
- 100 grams long-grain rice or couscous, cooked to serve
- 3 tablespoons coarsely chopped fresh parsley, for garnish
- coarsely grated zest of 1 lemon, for garnish
Method
- Put shrimp in a mixing bowl with oil, garlic, salt, and pepper. Toss to mix well.
- Put large non-stick sauté pan over high heat, for about 2 minutes. Put the shrimp mixture in the pan and stir for about 2 minutes, until pink.
- Reduce the heat to medium and add the tomato sauce, lemon juice, and sugar.
- Cook, stirring, for about 3-4 minutes. Check the seasoning.
- Serve the shrimp over the long-grain rice or couscous. Garnish with lemon zest and fresh parsley or other fresh herbs.
